build-system: emacs: Clarify %install-dir.
The old comment is no longer adequate, see
<https://lists.gnu.org/archive/html/guix-patches/2021-05/msg00113.html>.
* guix/build/emacs-build-system.scm (%install-dir): Adjust comment to better
reflect usage of this variable.
